CHEF ALEX FEE

Alex brings more than 20 years experience to the kitchen. Starting as an apprentice at the Hyatt Regency Sanctuary Cove, he graduated to fine dining at The Fireplace before further honing his craft in the UK and Europe at Michelin Star restaurants.


Alex is a passionate believer in locally sourced produce and growing his own herbs and other ingredients on site in the Pethers grounds. "It's all about freshness, balancing flavours, textures and aromas, and delivering a memorable culinary experience that reflects the superb, natural setting." 


Once he's finished service, if time permits, Alex loves to discuss the dishes, explaining the philosophy underlying his menu and seeking feedback from guests. It brings a totally new dimension to the meal. If you're interested, please ask the team to check whether he is available.
